What are Mollejas?

Mollejas are commonly referred to as sweetbread, but no one is really sure why. Mollejas are not a type of bread and they are not sweet, so the name sweetbread does not really add up. However, while the name is deceptive, the flavor and texture are the truth!

Mollejas is the name given to meat from the thymus gland. Sweetbreads are rich, tender, and fried, so they have a nice crispy exterior. Therefore, if you can get over the mental hurdle of eating the thymus gland, you are sure to enjoy this delicious delicacy!

Does it Taste Like Liver and Other Organ Meats?

Mollejas is unique amongst organ meats in that it has a different flavor and texture. Many describe organ meats as “musty”, having a very distinct flavor that is usually an acquired taste. Mollejas enjoys the distinction of being the least “musty” of all organ meats, especially when properly fried and prepared in delicious sauces.
